Ingredients
- 1 1/2 Cup Brown Rice Quick Cooking Version
- 2 1/4 Cups Water
- 1 Bag Small Red Potatoes Quartered
- 1 Package Hillshire Farms Smoked Sausage Sliced
- 1 Onion Diced
- 1 Red Pepper Diced
- 1 tsp Garlic Powder
- 1 1/2 tsp Chili Powder
- 1 tsp Cumin
- 2 Scallions Sliced
- 2 Tbsp. Parsley Finely Chopped

Instructions
- In a large skillet, add water and potatoes. Cook for 7 minutes.
- Add rice, sausage, onion, red pepper, garlic powder, chili powder and cumin. Bring to boil and then reduce heat to simmer.
- Cover and cook for 10 minutes until rice is tender and most of the water has been absorbed.
- Top with scallions and parsley.
